Tips
– While doing a shallow fry, keep the flame low so that the sides dont get burnt and the food gets cooked well. If the flame is high some parts of the food tend to remain uncooked.
– For the plain dosas to be crisp, take a small piece of cloth and soak in water. Squeeze out the extra water but do not make it too dry. Run this piece of cloth over the tawa before each dosa(Do not apply oil, just spread the batter. Sprinkle oil after spreading the dosa). This reduces the oil content and makes the dosas really crispy!
– Do not keep the dish on flame after adding lime juice. If kept on flame for long, the dish tends to taste bitter.
- While heating milk, first add little water to the vessel and then the milk on low flame. This will prevent the milk from getting burnt even if you dont stir it.
- While cooking dal, add half a teaspoon of oil. This will help the dal cook better and stay non-sticky. Also, you can keep the dal soaked for about 10 mins before cooking it so that the dal cooks well.
- While preparing pulao or biryani, soak the rice for about 20 minutes in plenty of water. The rice would then need lesser water to cook and cook evenly and faster.
- While washing the rice for preparing biryani or pulao, wash it under running water for about 2 minutes. Ideally when you soak the rice, the water should be clear and not be white or translucent. This is to ensure that the starch is washed away and the rice grains do not stick to each other after cooking.
