Sabudana Vada (Sabudana Wada)
Today is Sankashta Chaturthi and time to fast too. On this day a lot of people fast in various ways. In Maharashtra, most people eat dishes made out of Sabudana (Sago). Sabudana can be used to prepare khichdi, vada, etc.
I am posting this recipe of Sabudana Vada today. This is the first dish that I ate which was prepared by my mother-in-law. It was the yummiest vada I had ever eaten. The dish also brings back some sweet memories :).
Ingredients:
1 ½ cup Sabudana (Sago)
3 medium sized potatoes
1 cup Roasted Peanuts
3 green chillies
2 tbsp Coriander leaves
½ tsp cumin seeds
1 tbsp Lime juice
Salt to taste
Oil for deep frying
Method:
Soak the sabudana in water for about 2 hours. The water should be sufficient to cover the sabudana. I soak this overnight so that the sabudana soaks evenly. Drain out all the excess water
Boil the potatoes and peel them. Mash the boiled potatoes. Keep aside. Grind the roasted peanuts to a coarse powder.
Grind the coriander leaves, green chillies, lime juice and cumin seeds without water. The paste does not have to be fine. Lesser the water, the better as we need to deep fry the vadas.
In a bowl, mix the mashed potatoes, the ground peanuts, the ground paste, sabudana and salt. Mix well so that the mixture binds itself so that it does not disintegrate while deep frying.
Divide into sixteen portions. Flatten between the palms to give it a patty like shape.
Heat oil for deep frying. Once the oil is hot, add the vadas to the oil. Fry on medium-high flame. Fry completely on one side and then turn it. Fry till the vada turns a nice golden color.
Server hot with peanut and yogurt chutney or any chutney of your choice! :)

Hey mridula, this is something I prepare almost once a week for my husband…he loves them. Once it happened that my husband was in great hurry to eat them, and i didnt have boiled potatoes. So what i did is, peeled and grated them. Added this grated potatoes, and a little of maida for stickiness. Ever this turned out very well….

We just finished our Navratri fasting eating only sabudana khichdi… if only i knew the recipe of sabudana vada then… It sounds yummy, il try it soon..!!!
