Upma or upittu in konkani also fondly known as “concrete” by most of us is actually a simple and nice dish when eaten hot :D. The recipe I am posting today does not have any onion or vegetables which means the preparation time is less.

Ingredients:
1 cup rava (semolina)
½ tsp mustard seeds
1 tsp urad daal (white lentils)
8-10 methi seeds (fenugreek seeds)
¼ tsp hing (asafoetida)
4-5 green chillies
8-10 curry leaves
Salt to taste
Sugar to taste
Coconut for garnishing (optional)
Water
Oil

Method:
Heat about a tablespoon of oil. Add the mustard seeds. Once they begin to splutter, add the methi seeds and the urad daal. Fry for a min. Add the green chillies and curry leaves. Fry and put in the rava. Fry the rava on a low flame for 8-10 mins or till the rava is fried.

In the meantime heat about a little more than a cup of water (1.25  cup if you like it very soft).

Once the rava is fried, add the salt and sugar. Mix well. Pour in the hot water. Cook covered for 4-5 mins on low flame. Turn off the flame and mix well.

Garnish with grated coconut. Serve hot with sev or any other dry snack you like!!
