Aloo Paratha v1.0
Dish liked by almost all! If you are wondering whats the v1.0, its version 1, which means there will be a 2.0 soon. This versioning comes from the engineering background :D. This is a simple and quick version. Here it comes..
Ingredients:
Paratha:
2-3 cups Wheat flour
2 tsp oil
Salt to taste
Water for kneading the dough
Stuffing:
2 boiled potatoes
2-3 green chillies finely chopped
¼ tsp ajwain
½ tsp cumin seeds (jeera)
1 tbsp chopped coriander leaves
Salt to taste
Method:
Knead the wheat flour with little oil,salt and water into a dough. Keep the dough aside for half an hour.
Mash the boiled potatoes and mix salt, chopped green chillies, ajwain, jeera, salt and coriander leaves. Make small equal portions of the mixture. Now divide the dough into equal portions.
Roll each portion into small circles, the size of puris. Keep the potato mixture in the middle and seal the end like a “potli”. Roll out one more time to make it like a chapathi. This has to be thicker than chapati. Trying to roll it too this is going to break the paratha.
Heat the tawa. Once hot, place the paratha on it. Add ghee or oil and fry both sides till done.
Serve hot with curd n sugar combo or pickle!

hmm, indeed alu paratha is one of my favourite. The only change in my recipe is that i make the paste of green chillies, coriander, garlic flakes (2-3), lemon juice (half lemon), and mint leaves (pudina). This paste would be mixed with smashed potato …. try this, you may like it.
